Food fraud is the violation of law with the intention to deceive consumers for financial gains. How many times it was found that food labelling of products was providing deceiving information. Extra virgin olive oil found not to be the case or fish fillets found to be of another species. Food fraud cause billions of losses to the food industry, cheats consumers and most importantly is dangerous to the consumer’s health and food safety. It is estimated that food fraud represents 1% of the global food economy and close to 40 billions. Expensive spices like saffron, basil and others can be subject to food fraud. Fish also can be subject to food fraud because consumers are not knowledgeable to recognize the different fish species, in particular when they are in processed form as fillets or other form. Everything can be faked or contaminated with forbitten substances. The list of counterfeited products is endless. In many cases there is a fake origin of the product to deceive consumers.

It was not far that we became aware of food scandals like the use of unsuitable horse meat instead of beef meat, the sale of dioxin contaminated poultry meat, the use of forbitten chemicals in food production, melamine in baby milk, the sale of low quality honey counterfeited with sugar as quality honey and many other. The actors in food fraud are diverse and may involve criminals, mafia people or simple producers or other.The quality characteristics of a product have a price or added value in each product. When we buy a product of lower quality at the price of a product of higher quality because of a deceptive labelling is food fraud. In many cases companies change the labelling description and the content of a product but not the size, colour and form of the packaging. Consumers do buy them because they are used to buy the same product and they do not read the labelling which is different than the one we bought the previous times.

Buying food in the internet is another purchasing procedure we have to check carefully.
